Super Sunday defensive strategy for food


WASHINGTON, Feb. 5 (UPI) -- A U.S. government agency has issued a defensive strategy to avoid foodborne illness during the big game.

Food safety experts at the U.S. Department of Agriculture advise dividing big-game viewing party food into two different teams -- uncooked and ready-to-eat. Keep each team in its own zone -- juices from raw meat can contain harmful bacteria that cross-contaminate other food.

The Department of Agriculture experts also recommend party hosts guard against allowing the following food violations:

-- Not calling "time outs" to use a food thermometer to make sure meat and poultry are safely cooked.

-- "Holding" foods for more than two hours at room temperature.

-- "Illegal use of hands" where unwashed hands spread bacteria as food is handled. Chefs and guests should wash their hands with soap and warm water for 20 seconds before and after handling food. Clean surfaces often, and wash platters before replenishing them with fresh food.
