CARAMEL CORN

About 6 cups

This is the sticky-sweet confection of the circus and boardwalk. Use this syrup if you want to add peanuts to the popcorn.

Pop:
3/4 cup popcorn (6 cups popped corn)

Melt in a medium heavy saucepan:

1 1/2 tablespoons unsalted butter

Add:

1 1/2 cups packed light brown sugar

6 tablespoons water

Stir over medium heat until the sugar is dissolved. Bring to a boil over medium heat, then wash down the sides of the pan with a pastry brush dipped in warm water. Place a warmed candy thermometer in the pan and and cook without stirring, to 234 degrees F, the soft-ball stage. Pour over the popcorn.
