My bet is that it picks up to Cat 5, loses a little as it gets close to land, and makes landfall as a Cat 4.

You are right. Whenever they track into the middle of the Gulf this time of year they get HUGE. Nothing to slow them down. I think we need to build a couple thousand Giant Wind Turbines out there. That way any hurricanes come by you get enough power to run the country for month plus knock the storm down a bit.
