Banana Bread recipes?
I'm looking for a perfect banana bread recipe: not too sweet, moist, and with lots of bananas. Any suggestions?

1. I just have some tips
As bananas get speckled and brown up on the counter, stick them in a freezer bag - don't peel them. When you're ready to use them, thaw, cut one end and squirt them out. They're gross but have a stronger banana flavor. I also cut up dried sweet cherries into the batter since we like them. And I use honey instead of sugar.

2. This is the best I know.
The recipe has been around forever, so you might have already tried it. It's usually called Hawaiian Banana Bread, or Kona BB, or some island BB. If it's too sweet for you you could probably cut back on the sugar.

2 cups sugar
1 cup butter, room temp
3 cups mashed ripe bananas (5 to 7 depending on size)
4 eggs, beaten
2 ½ cups cake flour
2 tsp baking soda
1 tsp salt

preheat oven to 350

In standing mixer or electric beater cream sugar & butter until light & fluffy. Add bananas & eggs. Beat until well mixed. Sift dry ingredients three times. Blend w/butter, banana mixture, Do not overmix. Pour into 2 lightly greased loaf pans. Bake 45 minutes to 1 hour. Loafs should be firm in the centers & edges beginning to pull away from sides of pan. Cool on racks for 10 minutes before removing.

Freezes well.

3. Here is the one I use
I got it out of a recipe book I hae had since high school. My family loves it.

Ingredients:
1 Stick Butter
1 C. Sugar
2 Eggs
2 C. Flour (plain)
1 tsp Baking powder
1 tsp Soda
3 Medium sized bananas, mashed
1 C. Nuts
1/2 tsp Salt

Directions:
Cream butter and sugar, add one egg at a time. Mix well. In another bowl combine bananas, flour, baking powder and soda and mix well.
Add butter/sugar/egg mixture and mix well. Bake in loaf pan at 300 degrees for about an hour. (Around 1 hour, 15 minutes for me)

4. that's very close to the recipe I've been using
except it is only 3/4 of a cup of sugar. But it's been coming out dry.
Overcooking is the obvious explanation, but I try to watch it carefully.
Perhaps I should take it out of the over when it's still a bit doughy?

5. I lost my favorite
It had orange juice and part whole wheat flour. Just scrumptious and very moist. But I lost it and haven't found anything similar. Wah!
