I don't have smoked turkey so I'm using some Liquid Smoke in the pottage.

1. I used to make split pea soup every year with the carcass
it works nicely. This year, the carcass will make stock and the rest goes into enchiladas. Since living out here in the Latino heavy east side, we've been using pork to flavor soups and half the hassle of chicken or turkey enchiladas is cooking the chicken or turkey.

4. I do the traditional turkey with rice soup
Stick the bones in the oven to roast for a bit then throw them in the pressure cooker with garlic, onion, celery, carrot, thyme and a bay leaf. After about an hour I strain it...add fresh veggies and cook a little more. Then I add the cooked rice and any left over meat bits.

It's simple but it's what the family likes.

8. Had a large carcass with meat and the neck. I used the large pressure cooker
four times, using different rotation of bones, etc. with fresh vegetables and herbs each time.

9. ah, interesting... I've only recently started doing stock
again. I was too lazy there for a while, or the carcasses would just sit in the freezer into perpetuity. ;)
