2. Turkey Pot Pie, Turkey Barbecue, Turkey Croquettes.
All easy (especially if you use Pillsbury pie crusts like I usually do!).

I like the croquettes because they're not only simple, but versatile. I can vary flavorings and adapt to different uses, from sandwich fillings to a dish along the lines of veal Parmesan.

Last spring, Subway had a chicken salad made with pecans and dried cranberries. I tried it. Their version was bland and boring, needed some seasoning like onion, garlic, celery. With some improvements, this could be a good entree type salad served on a bed of greens with something crunchy like chow mein noodles or tortilla strips.
