Today I am cutting up my vegetables for my stuffing and making my chicken broth

Today I am cutting up my vegetables for my stuffing and making my chicken broth
It is a lazy day and I find that "fresh" produce doesn't last as long as it used to...and don't want to take the chance it is unusable, so it is going in the freezer.

One thing about making chicken stock....I have started using ALL of the stuff I used to throw away...onion peels, etc...and I LOVE making my broth!
The flavor is amazing!

Is it just me or does everybody let the stock boil over before lowering it to simmer? Every single time?

Naw, everybody does something like that from time to time. I scorched some squash in the oven the night before last, and the whole house still had a faint smoky odor this morning.

Brilliant!
Why didn't I think of this. I should start doing my prep a little at a time each night. Would make it so much easier on Wednesday evening and Thursday next week. Maybe I won't have to stay up until 1:00 in the morning and get up at 4:30 or 5:00 am like I usually do.

Of course, I do enjoy banging around in the kitchen most of the night while the lazy folks in the household and the out of town guests wonder if I'm EVER going to stop making noise!

8. I used to be up way way way late on Christmas night.
Wrapping wrapping wrapping, sewing, cooking. I loved it. Christmas was a huge production then. A full breakfast with homemade apple strudel, eggs with tarragon cream, sausages, raspberries that were canned in July....then a full dinner later.

7. do you roast your chicken bones?
I usually start by roasting several turkey wings for the drippings that will flavor the gravy. That way I can make the gravy ahead of time if I wish.
