Apple Pie COOKIES????







Deb over at SmittenKitchen has been busy making up these imaginative fall treats.

Each is about 2.5" round and is composed of pie dough (her recipe) and a bit of cinnamon-sugared apple circles (yes, circles).

4. My favorite was apple-pecan muffins
I say "was" because I still haven't come up with a gluten free recipe I really like, although the apples, pecans and brown sugar help it taste a bit less like cardboard. I'm on the right track, increasing tapioca flour seems to help both texture and taste.

Gluten intolerance is a really tough one, as is lactose intolerance. I have a hunch that you have the creativity and persistence to find a way make it work for you, though, somehow. Keep reading, keep researching, keep experimenting, stay optimistic until you find your answer. For now, it's fall and apple/peach/pear/berry crisp time - they're wonderful and can easily be made gluten-free.
