Salmon recipes?
It's time to clean out the freezer in preparation for winter, so I was wanting to cook some of the stuff I've accumulated over the summer. I have some salmon fillets. some breem and some other assorted fishes.

I also have some fruits and vegetables so I'm looking for a good salmon recipe if anyone has one.

1. Quick and Easy, about 9 minutes of prep and cook time.
This is how I treat frozen salmon.

Defrost your salmon filets, but do NOT pat them dry.

Take about a cup of panko bread crumbs and put in a bowl then add and mix in the following:
Tablespoon of dry coarse garlic
Teaspoon of fresh cracked pepper
Teaspoon of Kosher salt
Teaspoon of crushed red pepper
1/2 Teaspoon of fresh ground coffee grinds
1/2 Teaspoon of onion powder
A teeny pinch of fresh ground nutmeg

In a saute pan head about 2 tablespoons of canola or peanut oil over medium high heat.

Once hot coat both sides of the filets in the breadcrumbs coating evenly then place in the oil.

Cook about 3 to 4 minutes a side depending on thickness of the filets and how done you like them.

This will give you a nice texture and an almost fried flavor.

2. I soak it about 6-8 hours in this marinade, then grill:
Orange juice, salt, pepper, a couple of bay leaves, a little oil, and a large sliced onion.

Yummy when it comes of the grill. You can cook the marinade down into a sauce if you want to.

4. I like pasta with salmon
Thin spaghetti or angel hair pasta
1 onion sliced very thin
Cream
Salmon cut into small pieces
Frozen peas

Fry onion - don't brown! Add peas, pasta then cream and toss through. Add salmon at the end and allow to cook in the heat of the dish. Top with parmesan and a heap of freshly ground black pepper.

5. Salmon is so adaptable.
We enjoy it the most when it's done as simply as possible. Because I live in an apartment building, I don't have access to an outdoor grill so I usually prepare it either poached, baked, or sauteed. Here are a couple of ideas to play with.

I rub it with sriracha sauce and a few drops of sesame oil and grill it on stove top.
Poach it with Old Bay seasoning in water and white wine.
Sautee it in butter with lots of lemon juice and dill.
Marinate it in Thai peanut sauce and sautee it in a few drops of canola or peanut oil.

All done in minutes even when working with partially frozen fish. Have fun with it!

6. I like it grilled over wood charcoal
It gives it nice, smokey flavor. It's really good on a cedar plank, too. Just season it with salt and pepper, or your favorite herbs or rub. I really like it with McCormick Smokehouse Maple dry rub.
