Sunday....What's everybody cooking today thread...
I'm making sweet potato chili. Basic Chili with beans subbing out the meat for chunks of sweet potato and I also add corn. I made it a tad too spicy but it will mellow out when I put it over Rice.

My mouth is burning already...but in a good way.

1. Leftovers here - time to clean out them out so I can start making meals again.
One blue cheese stuffed hamburger, some orange chicken with asparagus, ratatouille, rice and potato salad with vinaigrette!

I love leftover night. Easy for me, gets the job done and it was all good the first time around.

Your chili sounds great. I like to put cheese and sour cream on mine, particularly if it's hot.

2. settled for a roasted broiler tonight
I always bake a deli broiler for another half hour or so. It's just one of those nights -- a very anxious and heart-wrenching family situation going on with a court hearing in the morning 3000 miles away. Custody matters can be so bitter and awful.

Can't be bothered to cook.

It's hard not having any control over how things will shake down and being so far away just makes you feel out of touch and disconnected. I'm so sorry.....

3. I did a copycat recipe
I saw these miniature turkey meatloaves topped with mashed potatoes at Trader Joe's. Frozen. I like fresh, so I decided to make my own.

Also made roasted asparagus and roasted gold beets.

4. I had a halibut fillet
I coated it with a mixture of cornstarch, rice flour and cornmeal, seasoned with black pepper and let it crisp in a frypan with a little spritz of olive oil. A lemon wedge finished it off.

A bitter green salad was the side.

7. Too hot to cook tonight.
I might go suck on some frozen soup if it cools off before bedtime.

Love your sweet potato chili idea. We've been on a sweet potato binge, & I'm going to have to try that.
