Candied ginger

I am making candied ginger today - I wanted some for inclusion in the Pumpkin-Ginger Scones posted here, but didn't want to pay outrageous prices for product full of HFCS.

Fresh ginger was $1.69/lb down at the little middle eastern market, and sugar is cheap, and I have got the time this weekend.

Also, since I am on a homemade ice cream jag, I was really jonesing for some ginger ice cream.

3. Thanks for posting that - I may try it next spring with fresh ginger roots from my garden
Last fall someone at the farmer's market had fresh ginger and turmeric roots - I froze about half of each and planted the rest. Both came up and grew pretty good. I want them to keep growing so I need to be cautious about digging, but I hope to have my own fresh exotic spices growing right outside!

5. I was just thinking that! I have a recipe I'm making...
I like the idea of making the ginger but since I'm headed to TJ's, I may as well pick up theirs!

1 8oz. cream cheese
2 oz. butter
2 T cream sherry
zest of an orange
zest of a lemon
8 dried apricots, chopped
1/2 c craisins
1/4 c candied or dried ginger

Blend and roll into a log or fill a bowl to make a cheese ball. Refrigerate. When hardened, roll log in chopped walnuts OR unmold ball and press walnuts over surface. Serve with thin ginger snaps.

8. I supported a small local business by buying the ginger where I did.
Wish I could have afforded to make it with organic sugar, to boot. Alas.....
