help me create this recipe please
Edited on Wed Nov-03-10 09:47 PM by NMDemDist2
i bought a bunch of seedless mandarin oranges and since Mr. K doesn't really care for citrus and i have a potluck to attend I figured "Fruit Salad!"

so i'll take a bunch of the oranges, get some of the excellent white grapes we're getting right now and use a yogurt dressing. so what else? the melons right now stink, some apples would be good though, we're getting nice Honey Crisps right now.....

but the oranges and apples are both on the tart side while the grapes are very sweet. and what is that spice that starts with a "C" that is often added to this type dish? Cardamom? or is it caraway, or coriander? would that be good?

what else do you think?

1. Cardamom has a nice citrus-y taste.
That seems to be a nice compliment. :hi:

8. Cardamom?
I think you have that backwards.

Cardamom is a member of the ginger family and has ginger's typically perfumy / chemical taste profile. It hits my tongue as mentholated ginger. Coriander has lots of terpenes, woody citrusy notes. To me it tastes like lemon pepper, only sweeter.

4. how about some toasted almonds?
It seems that some kind of nut would be a terrific addition. Sprinkled on top, perhaps.

And what about some pomegranate seeds?

6. At this time of year,
the big Asian pears found in many markets are really, really good, very sweet.

Another fall specialty produce item that is nice are the firm (non-astringent) varieties of persimmon like Fuyu.

Both of those would be something a little "different" to add, and are in season now.

7. A cardamom, greek yogurt and honey dressing would be great
I love cardamom. I'd glaze the Pecans with some brown sugar and maybe a hit of cayenne for a spicy hit. I'd maybe even consider adding some basil shreds to garnish.

I like the idea of adding the asian pears.

You also could go in another direction and mix the oranges with sweet potatoes cooked with cayenne or chili and use a ginger yogurt and honey dressing.

12. It needs pineapple
I have a current batch of fruit salad composed of mandarin oranges, honeycrisp apples, bananas and pineapple. To me, those are all that is needed. Well, plus whatever creamy binding agent you use (yogurt, whatever).
