Simply Sinful Cinnamon Muffins
Do these not look fabulous? I want to make them but have no cinnamon chips. I bet I can still do it, altho they may not turn out as good as they would be with them.

1. They do look fab ;=D
However, I don't care for the thick glaze on top of it. I've never been fond of glazes.

Thanks for posting this hippywife.

2. Muffin! :D
Long time no see!

It does have a streusel topping so I'm not going to make the glaze.

3. Hope things are going well with you
Since we both live in Tornado Alley, I keep up with what the weather is doing. Have been concerned when all those storms happened earlier this month. Hopefully they missed where you live and work.

I'm thinking to trying that recipe with blueberries. Yes, Yes I :loveya: me some strudel. However, tonight is dedicated to making Strawberry Shortcakes with homemade whipped cream. I'll take some pics to post.

:hi:

4. And I hope they are well for you, too, dear.

So far we've dodged the storms. All is just fine here.

I have these in the oven now. I added a 1/4 t. of cloves to the batter along with the nutmeg, and soaked some sultanas in the egg and milk mixture while I put together all the dry ingredients. I also used organic dark brown sugar in the filling and it looks positively dark and luscious! I'm thinking this will be like a cinnamon bun in flavor, if not in texture. Making just six large muffins.

Your strawberry shortcakes sound wonderful, too. We're just having them over ice cream tonight.

Let me know how these turn out with the blueberries in them. :hi:

Edited to add: I didn't have any of the special ingredients listed in the recipe and just went with the corn starch and made the filling with the substitute directions.

5. Oh those damn cinnamon chips are a pain in the ass to find
Edited on Sun May-23-10 09:48 PM by The empressof all
When I have something that I'd like to use them for I can never find them. I'm now on a mission and look in most every store I go to now. The one place I shop regularly claims they can't keep them on the shelves. I'm gonna have to ask the manager to save me a pack or two on their next order.

6. If you are on a mission for these muffins...stop!
They would be way too much with them. As I made them, the result is this:

If I were told I could only make and eat one muffin for the rest of my life, it would be this one!

Bill and I just split one and he says we have a problem...there's only five left. Fortunately for him they will be his breakfast the rest of the week.

:hi:

7. Those muffins really look amazing
I will make them someday. I love those cinnamon chips in mincemeat and pumpkin cookies. I also like them in apple crumb coffee cake that I make on occasion. I am in awe of your self control in only eating half of one of those muffins.

8. You can order the chips from the King Arthur site
if you really can't find them anywhere else.

And it wasn't self-control at work at all. It was just that I knew I needed the remaining five for Bill's breakfast this week. I probably will make them again next week and he said he had no problem with that.

They really are awesome!
