Pork short ribs

Although I love babybacks, the store had pork short ribs on serious sale - they were practically giving them away - so I bought some. I decided to a cheapo version of how I do babybacks.

Basically all I did was steam them for over an hour (somewhere up to 90 minutes is about what you want, size/qty depending). I just steamed with water.

I then removed them and used two different bbq sauces on them and grilled them to finish. That was all, and it was fall-off-the-bones yummy.

For bbq sauces, first I used my favorite all around grilling sauce, Lawrey's Tequila and Lime sauce (found in the bbq sauce section; it likely has neither tequila nor lime actually in it) and after a first pass with that, I used K.C. Memphis BBQ sauce (I think - it's in the fridge right now, and I'm not).

Use whatever you want. Just steam over water, slather on some sauce, grill on low (remember you're not cooking them, just finalizing the coat), eat.

I personally see no reason why this wouldn't work for beef short ribs, although I think you could cut back on the steam time a bit to maybe an hour, given the nature of the beef muscle tautness (or lack thereof).

For reference, you could do babybacks this way too. I have a little more involved technique - I steam with a can or two of Foster's, with a Margarlica rub while it steams, and finish grilling the same way as above with sauce. I originally just used water, and I don't drink anymore, so I'm back to just using water for steaming. Rub is optional. Frankly I don't think the beer does a damned thing to it, but it just sets the tone, that's all. The rub does, of course, add, but it's also pretty darn good just with the bbq sauce.

I have yet to make a really good, fall off the bone recipe that doesn't require a long time in the crock pot.

I'm going to try your way next time. I'm wondering what kind of kitchen apparatus you steam them in. Inquiring minds want to know. I have a large pot with a metal colander that would probably work, but the colander is deep - almost touching the bottom. But what do you use?

A friend of ours makes and sometimes shares the absolute best BBQ sauce I've ever had. I haven't made it myself, but there are many online recipes for it.

2. For steaming

For babybacks, with the rub on them, I used some baking cooling racks in a roaster pan with beer in the bottom, ribs on top, and aluminum foil over, then into the oven.

For these short ribs I really didn't feel like putting much work into them, so I took a multi-quart pot, put a colander on top (the water was about 1/2" below the bottom of the colander, put an extra lid on top of that (none of these were made to go with each other), put it on high to get it boiling, then dropped it to a simmer to keep the steam.

Frankly they were just as good as the babybacks, lack of rub aside.

p.s.: And, yes, I'm doing better, but not perfect. I had another operation a few weeks ago, and a colonoscopy on Monday showed a polyp with cancer in it. That was removed, but I guess my innards insist on producing cancer, so who knows. I'm working to get my strength back - shifting my meds so I don't fall asleep mid-day, starting to exercise - even starting to play the piano again. It may be another 6 months to a year, but I'll get there. Thanks for asking.

5. Tab, I forgot to say something just to you.
I was really sick - depressed-in-bed for three years after a stroke, and I really fell into a bad depression.

Exercise from a private in-home PT gal got me back on track. I am out and about walking, dining out, shopping, etc.

I wish the same for you!

I don't drive anymore, so I count on others - which I hate.

3. I saw someone do osso buco with pork hocks the other day
...on Food Network. That was surprising and looked delicious.

I've never seen pork short ribs in the store.
