Oven Fries
These fries have savory, crisp, dry edges, and they’re satisfying and somewhat addictive, just like regular fries. I use a mix of regular and sweet potatoes for this. Choose waxy potatoes, like new potatoes or red potatoes, which have a lower glycemic index than starchy russets.

Thanks for the link! I wonder what an offset spatula is? Just a regular spatula isn't good enough, or what, lol.

3. Maybe it means, angle the spatula? I've never seen a zigzag spatula.

4. Offset spatulas
are used in frosting big cakes. I don't have one, I just use a normal pancake turner type thing. I think the offset has about 2 inches of metal straight out from the handle like a knife and then the metal drops a couple of inches and then goes straight out for about 6-7 inches.
