Nirvana in a bowl
Tomato salad. So simple. So good.

One of our local farmer's markets just last weekend sold the very last of the local tomatoes. He is now getting Florida tomatoes, but these are different from the grocery store tomatoes. These are from other family farmers (big, but family nonetheless) who vine ripen and ship in flats. Today's tomatoes are huge - one was nearly 2 lbs. But not only was it huge, it was sweet and ripe.

Cut up as much tomato as you want. Add about 1/4 by volume thin sliced onions. Chop some parsley, basil, and oregano (you could also use dry, just adjust accordingly). Add it, along with salt and pepper. Add olive oil - the fruitier the better (We have tried many olive oils, including many from our local Italian grocers, and like best the Safeway house brand.) Let it stand at least 30 minutes.

Use bread to sop up that heavenly juice.

I can eat this every night and still want more.

1. One of my favorites.
Sans the oregano. I like to throw in some nice sweet cukes, too, and usually a wee bit o' vinegar. :9
