What's the difference between a tom turkey and a hen turkey.

What's the difference between a tom turkey and a hen turkey.
This year is the first time I've noticed that they're being labeled "tom" or "hen." And no smart aleck answers. I know tom is male and hen is female. I'm talking about taste, end results, etc.

the meat is the same in taste and juiciness.

but the hen is smaller and has more meat on the breast - honest, that's what I heard!
Toms are a little bonier but larger
