Date Nut Bread

Date Nut Bread

Makes 2 loaves

Oven: 350 degrees.
Bake for 50 to 60 minutes, center of oven.
Test w/toothpick, should come out clean.
Do not overcook. Edges should be scored prior to removing from pan.

Grease well and flour 2 loaf pans (9X5X3)

Mix together these 4 ingredients:

1+1/2 cups chopped walnuts
2 cups cut-up pitted dried dates
3 teaspoons baking soda
1 teaspoon salt

6 tablespoons Crisco
1+1/2 cups boiling water

4 eggs
2 teaspoons vanilla (I use imitation)

2 cups sugar
3 cups flour, mix two together

With fork, mix walnuts, dates, soda, salt.
Add shortening and boiling water. Mix so that shortening starts to melt.
Let stand for 20 minutes, stirring often

With whisk, beat eggs and vanilla in large bowl until combined.
Add sugar/flour mixture, stir

Add date, walnut etc. mixture, blend until just mixed.

Turn into pan
Bake
Cool slightly,
Score edges and tap bottom before removing from pan.

Cut when cold.

May be frozen

It looks like these'd be the regular loaves and not mini-loaves, right? If that's the case then I'd guess it'd make 4 mini-loaves.

2. Would make great mini-loaves but you probably should adjust
cooking time. If these are the pans that are about 2 to 3 inches wide by 4 to 5 inches long, it would probably make 6. Watch cooking times with glass pans or mini-loaves after 45 minutes.

4. I've been looking for a good date-nut bread recipe!
I'll make it for Christmas! Yummy! My mother use to make this............I don't ever see it anymore.
