Is anybody else here baking Parkin today?
It's sort of a gingerbread cake with rolled oats in it. I've read that it's traditional for Guy Fawkes Day.

Alas....I'm saving my calories for Thanksgiving. I love anything rich and sticky and Parkin is lovely with a nice cup of tea and scotch. Like fruit cake It's better after it's aged IMO

What I mainly bake is chocolate chip cookies. We aren't really dessert people except for that.

The recipes I'm seeing say to use pinhead oats/steel cut oats. Do they soften appreciably in the mix?

4. I use "rolled" oats.
They do soften, but retain some texture.

Do the recipes you see say to soak the oats first?
