Mahi-mahi tonight!
I got some frozen mahi-mahi on sale the other week, and tonight's the night. I'm going to use this recipe: http://allrecipes.com/Recipe/Ginger-Glazed-Mahi-Mahi/Detail.aspx

But I will bake it instead of frying it. I think I'll bake a couple of acorn squash to go with it, and a few baking potatoes.I would make rice but we just had some this week. Nice to bake the whole meal as long as I'm heating the oven.

Hm, maybe a bottle of white wine from the basement. We have a lot of 2-buck chuck--I suppose a chardonnay or a sauvignon blanc would be good.

LOL--seems like I always "push" the weekend on Thursday nights by opening wine! But don't worry--we are very moderate with it. One glass is my limit. :)

What are you all having?

1. Too many meetings for me
Hubby had just decided to cook up hamburger for himself, so I had an Italian sub at Substation.

2. I've made that recipe before and have used the marinade on chicken and shrimp, too.

3. it was really tasty.
I baked it at 425 for 25 min or so with the marinade on it, so it was easy.

4. Haven't picked up any mahi-mahi in

a really long time. Usually grab the salmon or perch or ahi tuna on rare occasions we want some seafood. Rather when we decide to eat it.

Bill came home early from work yesterday with a really swollen and painful ankle, even tho he didn't do anything to it, so I just grabbed a pizza on the way home (found a new place that isn't as terribly bad as the rest of them around here, folks from Pittsburgh moved here and opened it.) Waiting to take him to the doc today but they can't see him until 3:45. It hurts no matter if he stands or sits, so I'm suspecting gout. Will have to have the doc check his uric acid levels. Of course, keeping him flat on his back with it elevated is near impossible! :eyes:
