1. That looks interesting.
I gotta say I question that 'dinner for four'. I roasted a duck for Thanksgiving one year. There were just three of us & I ate very little. My husband & son ate the entire thing & were looking at me as if to ask "where's the rest?" :)

the two ducks I purchased yesterday were indeed far smaller than the ones I had acquired in the past. That's why I bought two.

I hesitated to type the yield part of the recipe in light of the disparity in weight of ducks I had just noticed. Funny that you mention it.

3. I'm sorry.
I didn't mean for my post to sound so snotty. I've just always remembered that disasterous dinner with not enough food. If I remember right I had a 5 lb duck which one would think would be plenty for 3 people. But when all the fat drains out (& ducks have a lot of fat) & you subtract the bones there just wasn't much left. :}

4. oh sorry I hadn't checked back on this thread
for so long.

I didn't think you sounded snotty at all Just thought it was ironic that you questioned the yield as I did as well.

An addendum to the recipe- I did cut the simmering time by 30% since I again, used fresh instead of previously frozen ducks. I really should have cut the time by closer to 50%. They completely fell apart so though they were delicious, the presentation left a lot to be desired.

This didn't happen with the ducks that had been frozen but were completely thawed, prior to cooking.
