This week's baking.

Cranberry Orange Muffins and Tollhouse Cookies with a little orange zest added to the butter.

Subbed one cup of white whole wheat flour, used yogurt instead of buttermilk, and added the juice of the smallest orange I zested.



Today have also made yogurt, bread dough, cut up a whole chicken and marinated it, used the back, tail, and wing tips to make stock (puppy and kits will the the little bit of meat, skin, and fat from those), getting ready to fry said chicken for dinner to have with the left over green beans with red potatoes and corn that was last night's dinner. :hi:

2. Hi yeller, hon.
It's my expression of love for this crazy little household. LOL

The chicken was really extra good tonight. I took some dried rosemary and thyme and pulverized them to a powder using the mortar and pestle, mixed them with olive oil, balsamic vinegar, the juice of a large lemon, salt, pepper, and garlic. Oh, and I poked holes in all the chicken pieces with a fork. That was my marinade. I fried as usual but this time there was so much more flavor in the actual meat, as well as the coating. :9

I just pureed a fresh pineapple and have it in the ice cream machine. Come on over and have dessert with us. Dagnabit! I still really wish I'd known you were here a couple of weeks ago. You're always welcome. :hi:

8. The chicken does sound extra good.
When I brined the chicken I fried for the 4th of July I used pulverized Herbs de Provence - there is something about that lilt of lavender that adds a yummy mystery to the dish. Also on the 4th my friend brought over a fresh pineapple and I blended up a bunch of pina coladas. I cook Thai often and always have coconut milk on hand. We definitely speak the same language - cuisine. My cousin has a little farm in Glenpool, I could have stepped on your toes at the farmer's market and never know it was you. Next time, for sure! :hi:

when you visit me in NY you can have Thai as often as you like, except on Friday, because if you visit on a Friday, that's when I turn my kitchen over to YOU! We'll make a party of it....

Bill went out today and picked alot of tomatoes. So many are split because of the intense heat we've had here. Hopefully, we can salvage enough to do something with.

You work full time, yet cook like you do - I want to move in. Especially for your FRI. night pizza! I hope your hubby really appreciates what he's got!

I am sure he does--but wow--the baking and cooking skills you have are amazing.

Hubs definitely does appreciate it. And usually it's fun for me except when I'm too tired. I've kind of got it down to a schedule of my off hours, usually on Saturday and Sunday. I have to come back to work to get a little rest. LOL

7. You should be a photographer for a food magazine.
Your stuff always looks so yummy. Darn . . . wish I had some cranberries in the freezer. Your tomatoes look good, too. All I've had ripen so far are a few sundrop cherry tomatoes.

11. Wow! That's something to consider.
Except if I'm really trying, they don't turn out so well. I'm kind of an accidental photographer. LOL

We had tons of tomatoes that just would not ripen. They were the right sizes but a bright greenish white. We brought them into the house and they turn nice and red in just a day or three depending on what stage they were in. You might give that a try.

13. Last night, I made the oatmeal cookies you posted earlier
I thought the molasses might throw them off a little bit but they snarfed 'em up like it was Christmas or something. Oh, and they stayed puffed up like I like. I used craisins and walnuts.

Oh, well, fiber for the family. :)

16. Glad those turned out so well for you.
I think people who have never had molasses are afraid of it. After all, it doesn't smell really good just in the bottle so they don't know what a wonderful flavor it adds to things.
