Marinated mushrooms
Buoyed by the success of my fridge pickles, I decided to make a batch of marinated mushrooms- one of our favorite delicacies of all time

cleaned a pound of fresh button mushrooms, then boiled for about two minutes. Cooled under cold water to stop the cooking.

for the brine:

5/6 cups white vinegar
1 + 1/6 cups water
1 generous TB kosher salt
a nice pinch of sugar
two bay leaves
1 tsp whole mustard seed
3 small garlic cloves fresh from the garden, sliced in half

That's it!

Packed in jar, refrigerate immediatly, ready in two days, gone in three!

just the right tang/salt/sweetness balance that we like

must. make. more. mushrooms!!!! :rofl:

1. Bet those are tasty!
Here's an easy, peasy way. Don't wash mushrooms under water, just brush off dirt.

Slice them and marinate in Italian dressing for awhile until they absorb it. MMM. Good in salads, etc.

Or don't slice and then marinate and serve whole as appetizers on a toothpick, eh?

sounds tasty! have to try it that way. definitely sounds toothpick-worthy!


Brought out a dish of the pickled ones with toothpicks - greens heron was delighted!
