So, I went to the store and there is a big bag of overripe bananas for $1.00.

So, I went to the store and there is a big bag of overripe bananas for $1.00.
What do you do with them when you get them home? Instead of the old standby, banana bread, you go to this website and check out the banana cookies.

So far I've made the Banana Chocolate Chip Cookies and the Banana Mini Morsel Bars. I'm still waiting for the bars to cool so I can apply the powdered sugar, but they look and smell great. The cookies are a definite hit. They are moist and chewy with lots of chocolate flavor. I didn't use any nuts in either recipe, but when I make them again I'll add some just for a little crunch. I think toasted coconut would be a tasty addition, also.

1. Banana's freeze really well

Just take them out of the skins and cut off the brown parts. I tip both ends as well. (I don't know why but I just do) Then throw them in a big zip lock and freeze. I use them regularly to make Smoothies. Pop a frozen banana in the blender with some Fat free milk and some Stevia, A few Pecans and some Vanilla for a Banana Pecan Smoothie. Yummers

You can also use them for recipes later at your leisure. I just sit them over a colander in the sink to thaw and drain a bit before I use them.

2. We talked about freezing some, but my DIL was anxious to try the cookies,
so that's what we did. I had also seen a suggestion to mash the bananas, add some lemon juice and freeze them in recipe sized portions for breads, pancakes, etc.

DELICIOUS! Great recipe link too. I'll be making some of those when the kid needs a care package next fall. I love the banana, chocolate, peanutbutter combo ones. Yummers.

4. You can actually make a jam/marmalade from them
I did that over 20 years ago as Christmas gifts. It had nuts, requisite Suregel, Sugar, lemon juice. It was terrific on pancakes.

I usually have a pretty good sized supply in the freezer for our nightly smoothies. Alas I'm all out right now and have to buy them "fresh" at my costco run today. :wow:

7. We do smoothies, too
We always stock up when there's a good price. I slosh a little lemon juice in the bag to keep them from browning, which doesn't affect the flavor when you use them. A scoop of protein powder, some flax oil, chocolate soy milk, and a scoop of Benefiber if you're replacing a lot of meals with these (too little fiber and all that protein = bad digestive mojo) and you have a serious meal.

For quick "ice cream," you can also run them through the juicer (at least my Champion). Most amazing stuff ever--smooth and creamy as the best ice cream, but zero dairy or sugar. For special, we'll put a scoop on fresh brownies or oatmeal cookies. :9

My daughter freezes them and I forgot what she said she uses them for. But I've had a few at that point so I've been tossing them in the freezer, and keep forgetting to ask her what to do with them. Your post reminded me that this is exactly what she said, she makes smoothies out of them! YUM!
