I have to go to a potluck on Sunday. Suggestions?
I think it will be 20-25ish people. I am not good with desserts, prefer salad or main dish type stuff. Thanks!

3. Oh, I made a lovely coleslaw the other day...
it stands up well to ... well... standing and it's cheap to make.

(My mother used to add pineapple and little marshmallows, it seemed good at the time)

6. potato, caramelized onion, swiss chard, gorgonzola tart
not hard to make. delicious appetizer or main dish.

Pate brisee:

(makes two 11 inch tart crusts)

3 cups flour
1 tsp salt
2 sticks unsalted cold butter
1/3 cup ice water

in food processor, blend flour and salt add butter cut into chunks, pulse a few times until flour/butter mixture is "gravelly". Add water through feed tube just until dough forms a ball. turn out onto floured surface, pat into discs, roll out and fit into 10 or 11 inch tart pans with removable bottoms. prick dough with fork. Freeze for 30 minutes. blind bake at 375 for fifteen minutes with tart shells covered with foil and pie weights- dried beans work well. uncover and bake for 15 minutes. Cool.

Caramelized Onion: 6 large onions thinly sliced, saute in 3 tablespoons butter over medium heat until soft and pale gold. Cool. Saute chopped chard in a little olive oil.

boil 1/4 inch rounds of red potatoes until tender. Drain.

Filling: l lb of gorgonzola, 3/4 cup of light cream, 4 eggs. pepper and a handful each of fresh thyme and chives, minced- all whirred together in processor.

spread onions on shells, then chard and potatoes. spread filling gently over veggies. bake at 350 until golden- around 30-35 minutes. Serve3 warm or at room temp.

7. This sounds insanely delicious - it has all my favorite stuff in it
except I'm not crazy about gorgonzola, but I can see it being just a background flavor with the eggs and cream. I will try this, although probably not for this occasion, but thanks for a great recipe!

9. Phoebe, pick a cheese you love and make it with that.
love brie? make it with brie, or Manchego or Gouda or cheddar or any other cheese you love.

13. Not true!
I've had some lovely brie baked inside a pastry crust. It's to die for! If I don't feel like going to all the trouble, I simply place a couple pats of butter on top and heat it slightly. Nothing like a nice, warm, oozy brie with apples and bread. Mmmmm. :hi:

15. My old standby is deviled eggs
They're inexpensive to make and everybody seems to like them - I never seem to have any left over. I keep them simple, with mayonnaise, salt & pepper and a little curry powder with the yokes, but there are tons of recipes out there with all kinds of additions. For decoration I like to put a slice of pimiento stuffed green olive on top.

I don't have a fancy-schmancy deviled egg serving dish, so I usually just line a platter with lettuce so they don't go slip-sliding all over the place.

posted a "recipe" on C&B, but can't remember which thread, although the recipe varies with whatever I've got in my kitchen.

Black Bean and Corn Salad

Black Beans (2 cans rinsed & drained, or 3 cups of cooked dried beans)
Corn (equal portion to beans. Fresh grilled corn cut off the cob or thawed frozen kernals)
Jalapenos (to taste--with or without seeds--chopped fine)
Diced Red bell or pimento pepper
Diced Green bell pepper
Chopped Green onions
Cilantro
Juice of 2 limes (I like a lot of lime)
Ground cumin
Chili powder

Mix together and let sit for a few hours.

The good thing is that you don't have to worry about refrigeration.

17. Asian chicken salad

Made this for the first time last night and it was perfect for a cold supper on a hot day--light, slightly sweet, slightly tart and crunchy:

mix in a bowl:
2. c. cooked diced chicken
1 head Napa cabbage, sliced thin
1/3 c. sliced almonds or broken cashews
2 c. chow mein noodles
1/3 cup sunflower or sesame seeds

mix dressing in a small bowl and pour over and toss:
1 tsp. salt
6 T vinegar--I used a comb. of rice and white vinegar, but cider vinegar would also work
2 T. soy sauce
1/2 cup light flavored oil
4 T. sugar

I made half this recipe and it would have served four at least. So the full recipe serves 8-10. And I didn't need to use all the dressing--still have extra. I think I still used the full amount of chicken because it was the main dish.

Don't laugh, a carrot souffle!! (Not a true souffle... but yummy just the same)

I've taken this to two potlucks... both times I've watched people take a tiny little teaspoon to begin with and almost all go back for much larger, second helpings. :)

It's great hot or cold.

19. Salmon loaf
Can salmon, pkg cream cheese, horseradish, worcestershire, lemon, onions, walnuts, parsley. Roll in walnut and parsley mix. Serve with crackers. Every drop of this always gets eaten.

Salmon loaf sounds just yucky. How about salmon spread or salmon pate?
