Soooooooooooooo.....anyone have any favorite sourdough recipes?
I started my own and my (second attempt) order from King Arthur finally arrived.

Gonna be a lot of sourdough starter 'round here.
Have any favorite recipes I should try?

1. duh... I figured something out today


I asked you about how you got such great slashing - because mine wouldn't slash deeply.
In another note I told you my Ain5 bread was much more moist...


well... umm maybe those two things go together.

2. Thanks! Do you dust your loaves with flour when you shape them?

I always have to with the Ain5, or they become sticky, spready, lumpy things. :)

3. no, no extra flour


I plop the moist dough onto my granite counter, and using my dough scraper, I shape it quickly then slip it into a baguette form lined with parchment paper.

I've tried dusting the top when it comes time to slash - but no go - next I'll try spritzing with water...


no extra flour, and no hands

4. Ahhh...your technique is quite different then. I do what the authors do
and it gets a flour bath right before baking. LOL.
But thats the cool thing about this process... it works in lots of different ways.

I don't put much flour on 'em. I don't like its taste. But used your clue to rest 'em in a bowl to prevent a lot of spreading (thanks!!).

I also find slashing a pain. I have best luck with a serrated. Last time I used kitchen scissors! Seems such a wet dough, that slashing is a challenge.

I tried scissors last time - it still looked weird


and because the dough is quite moist - to make a boule - I place parchment paper in a metal colander for it's rise. It slides out easily when it's time to place it on the hot stone.


I get great rise, never have the taste of cornmeal, a great shape, and it's easy.

5. What do you use to do your slashing?
A razor blade or very sharp serrated knife work pretty well. And sometimes it helps to wet the blade with cold water in order to make a smooth cut.
