what's for dinner?
I got some nice fresh artichokes so I'm steaming them up and serving them with Mesquite/Lime marinated small steaks and gonna heat up the little bits each of leftover Rice a Roni and Mac & Cheese (DH has been sick, so last week was 'comfort' food) with broiled home made bread and butter that I baked Friday

and.... I made butterscotch pudding for dessert

what's on your menu tonight?

1. We had a Spanish Potato-Onion Soup and
a salad made with cannelini beans, tomatoes, red onions, celery, lemon juice, garlic and olive oil and crostini.

2. Tonight,
I'm having an angel hair pasta dish. The sauce has sun dried tomatoes,chicken, kalmata olives, cream, lots of garlic (of course!) and feta cheese. I'll probably have mixed baby greens salad with a raspberry vinaigrette on the side.

3. Huevos Rancheros Rollups last night ... stuffed clams tonight
Sparkly made some rollups with fancy-schmancy herb and garlic tortillas, scrambled eggs, cheese, and chipotle salsa. Tossed salad with tomatoes. The rollups were **really** good!

Tonight I'll do some stuffed clams. Don't know what I'll make to go with them. :shrug:

6. Defrosted some minestrone.
It was not so fabulous the first time, don't know why I even bothered to save it. But at least I didn't have to cook tonight. I just didn't feel like it. :spank:

9. I got a great deal
On boneless chicken breasts and we hadn't had Lambrusco Chicken for quite a while so that was supper. I made garlic mashed potatoes and steamed corn. In an effort to get some bananas into my body I made some easy banana pudding with vanilla wafers.

11. Breakfast casserole, fruit salad, homemade bagels.
We're cleaning out the freezers and cabinets in preparation to move, and so we're having a layered breakfast casserole. Shredded fresh potatoes, shredded cheese, crumbled breakfast sausage, onions, green peppers with 2 eggs and 3/4 c. egg sub poured over it. Bake 375 for 40 minutes.

Dinner's going to start getting weird around here, I'm afraid. While I was gone, Mr. Pcat was a very good boy and cleaned out the deep-freeze and the cabinets of everything he could make for himself, so now we're down to some of the more bizarre staples like rice noodles and instant lentil curry soup.

12. Tuna casserole last night
I have started adding zucchini to my basic tuna casserole (you know - w/ noodles, peas, etc) -it's good and gives you more veggies. I'm craving homemade mac and cheese

14. Chicken Soup
My daughter is sick so I'm making Jewish Pennicilin. I'm off to the store right now to get the ingredients.

I'll also make some chicken salad sandwiches to go with the broth.

15. Something I've never done before
Spaghetti squash (which takes the place of the pasta I'm no longer allowed to eat) with my usual sauce - tomatoes, peppers, onion, garlic, white wine, lemon and a variety of herbs. Topped with goat cheese.

Anyone ever made spaghetti squash before? Is it really an ok replacement for pasta?

16. Spaghetti squash
I've had it before in place of pasta, a long, long time ago I experimented with it.

It's different in that the spaghetti squash strands are softer than pasta, spongier, and have a slight taste of their own. It's easy to make and kind of fun pulling all those strands out of the shell.

I guess I just prefer my old favorite - semolina pasta, but give it a try with an open mind and see what you think.

Your sauce sounds WONDERFUL! Hope you enjoy it.

I did try it and it was pretty good. I don't usually like the winter squashes (?) but this was really mild tasting. And it really did work just like pasta. We give it 2 thumbs up!

18. I have some turkey chili cooking in the crockpot
fortunately the weather decided to cooperate and it's only in the 50's today instead of flirting with 70 like it did yesterday.

I'll probably round the meal out with some cornbread and some spinach salad.

19. Chicago Style hot dogs.
Mrs bearfan is at her Mom's house in East Tx for 2 weeks. I am getting home exhausted from my job every day. I am out of shape big time from being laid off for so long.
