Had a bad night so I just got up.
I'm not sure yet.

1. Maybe Pad Thai.
But maybe not. I need to make yogurt and bake bread tonight, and maybe bake something for Bill to take to work if I feel up to it.

Bill picked up the "No Need to Knead" library book for me this morning, so I'll probably be baking later if I'm feeling better. Her technique seems to be a little bit wetter base dough...

Pad Thai is always yummy.

2. tuesday dinner
I have a meeting at my son’s school this afternoon, so it’ll be either something I make ahead or something quick. I’m decidedly in the mood for… Burritos! With plenty of cilantro and homemade salsa.

I think I'll make up a bunch and freeze most of them

I have some of that marinated beef and peppers from the salads a couple days ago and about 1/3 pound of Carne Asada from lunch at a restaurant yesterday that will make a great base

I bought yellow corn tortillas and enchilada sauce fixings, so that should do it.

my company is finally gone and hubby is working tonight so no pressure LOL

6. I was never an enchilada fan, but I made them for Bill one night about 6 months ago
and went crazy for them. There is something that happens to a corn tortilla with a good enchilada sauce that's a thing of beauty.

Your marinated beef and peppers, and carne asada sound like the perfect base. I have a little corning ware baker thats perfect for making a single serving. It gets used a lot when Bill is working late.

I haven't found a good homemade sauce I like yet, and have only found one canned sauce that I like. I like sweet heat, and I just can't get the right balance. So I use canned sauce and often make fresh tortillas. If they stop making it before I find a good homemade recipe I'm screwn. :D

Enchiladas are sure sounding good to me right now. We make our with black beans on the side. Yum.

17. Yep. I use a press.
I use a plastic storage bag thats been cut open, put the dough ball between the folds, then press. I press one while another cooks on the griddle. It makes it a speedy process and no mess.

For taquitos I use pre-made corn tortillas, but I use fresh most of the rest of the time.

10. A nice peppermint might be lovely. And good for the tummy, after A BIG LATE LUNCH.
I had hair that color once. Long hair. I wonder if I looked like that from the back...

I converted my smoker into a food dehydrator and ended up eating about 4 granny smiths as I set that up to test.

Sipping beers already too, so it may be a pillage day. :P

12. Coq au Vin and Pommes de Terres Au Gratin
...which is fancy talk for chicken stew and scalloped potatoes. I have a method of making it in about an hour and a half instead of having to marinate it all night. It tastes almost as good (and my family hasn't ever had it made the 'proper' way, so they don't notice the difference).

23. I've found the best results from baking in a covered pan.
I'm getting good oven spring, which makes it a better size for sandwiches, and when I cook it in a covered pot, i'm getting a crusty, yet thin crust. Also cooling before slicing seems to help with sandwiches.

16. halibut!
The market had small halibut steaks for $7 a pound! Wow. There were two of us for dinner, and so I bought two steaks at about half a pound each. Pan-browned them with butter and fresh lemon and dill weed, added some capers and black pepper and sea salt.

Lots of steamed green beans, and scalloped potatoes for the other person. I can't eat potatoes.

I haven't had a halibut steak for a lonnng time.
