Re-recommending a book: Ruhlman's Elements of Cooking
I pulled this off the shelf this morning for Gordon to read, as he's doing a lot more cooking lately (and slowly getting the basics of technique down). I decided to skim through it again, and was struck all over again by what a great resource it is. He's modeled it on Strunk & White's Elements of Style, and it's a concise and extremely informative handbook on the basics of food and cooking. I especially like his section on how to equip a kitchen (what you need, and what you do not need).

1. Thanks for postinng this. I hadn't seen this one before!
Amazon has quite a few reviews on this book for those wanting an overview.
The essay subjects are really interesting. Sounds like a great resource.
