Mashed rutabagas
I cooked and mashed 3 large rutabagas with Smart Balance spread, lowfat sour cream, milk, s&p and about 3 tablespoons of finely grated Parmesan cheese. They taste great.

I'll serve them for supper tonight with broiled pork chops and salad.

I hardly ever make rutabaga or turnip. But we do like them and I'm going for variety around here. The other week is was the braised fennel on toasted Italian bread. This week, rutabagas. I bought another fennel yesterday and will make that again tomorrow. I'm still surprised how mild it tasted.

1. I LOVE mashed cauliflower, but never though to try it with rutabagas!
Definitely something to think about making :D

4. the Weight Watcher way is to steam it, and mash it with Butter Buds or some
other zero point flavoring. It is a nice sub for mashed potatoes.

this thread is making me wish I had bought some winter veg at the store this week.

11. Yup. Same exact principle as mashed potatoes, so anything you like in them, or the rutabagas,
would work for cauliflower.

I learned about mashed cauliflower when I was low carbing.
Even my "eeew cauliflower" friends like them. :)

I bet it's going to be great all mashed. I want to add the cruciform veggies more often. I usually rely on steamed broccoli or cabbage for cole slaw.

20. Enjoy your veggies!
Tonight's combo of a broiled chop, the rutabaga and a salad made with Bibb lettuce was one of the all time great combinations. Pretty simple but they all worked together. I'm doing this again.

3. rutabagas are great cut up and roasted with a pork roast. I did one with
winter squash, rutabagas, parsnips, carrots and potato around the pork roast. I sprinkled italian herbs all over everything and it was soooo goood

Earlier, I found a recipe for baked, sliced rutabagas and apples. That sounded good, too.

thanks for the mashed cauliflower recipe. I keep non fat butter flavored powder on hand. In fact, I'll add some to tonight's rutabagas. :D

6. Turnips and mash are and ancient British dish
Rutabagas are pretty close to turnips.

(Turnips and mash == 1 part turnips and 2 parts potatoes + often the other ingredients you listed)

7. Mashed rutabaga and carrots was a staple winter dish in my mother's house.
IIRC it was seasoned with salt and pepper and a little margarine. I make it now with a pat of butter instead.

Your version with sour cream, milk and cheese sounds wonderful.

8. I have a giant rutabaga
some turnips and beets in the fridge. Was going to roast them tonight but neither of us are hungry or feeling quite energetic. As a matter of fact, I'm shutting down already and heading upstairs. Such a blah day...can't wait until winter is over.

Enjoy your root veggies but for the love of Mike, please get rid of things like non fat butter flavored powder. I like you too much to think of you ingesting that stuff. :scared: :hug:

9. mashed rutabagas were always a holiday staple...
where I come from.

Usually, just mashed like potatoes with butter and herbs, but one day I tried coconut milk and that worked very well.

14. The coconut milk sounds good to me
A different twist but sweetness is in many recipes I saw online. Baking slices with apples and nutmeg or the addition of sugar seems to apply to rutabagas. I'm intrigued by the coconut milk. Thanks!
