Potato Pancakes
I just made some for supper. Easy to shred in a processor but I've used the blender and like them smoother that way, too.

Here's the recipe I fixed tonight

I substituted the egg whites with some yoke from a carton for the whole eggs. I also used more onion and just used some cooking spray for the pans. I do have more than one pan going at the same time and use a 1/4 cup measure to spoon them into the pans and flatten.

I serve them with low fat sour cream for him and apple sauce for me. It's the whole meal.

1. I always throw in more onion
and I've discovered I like partially blended, partially grated potato. That means they hold together and still have a certain amount of bite.

I use an ice cream scoop to get it from the bowl to the pan.

just because I can.

I'd be inclined to use more onion too.

4. I used half an onion last night....
But the previous batch had a whole fairly large one and that batch tasted better.

6. My grandmother used a meat grinder
A hand-cranked thing you attach to a counter. Put a really big bowl underneath to catch the drips. One large potato to half a largish onion, one beaten egg, enough flour to make it just hold together, and salt and pepper. Heat oil in a large skillet and pile the mixture into mounds. Squash mounds into pancakes and cook, flipping once.

The texture is much different from a food processor.

9. I'll try that
I have a meat grinder like your grandmother's but I don't think it works well these days. It's more decorative. But I do have a grinder attachment for the Kitchen Aid. That ought to work. Thanks for the tip!

12. Be sure to run the KA on the lowest speed for grinding spuds
It will come out just like the hand cranked jobbie (I have one like it, too.)

7. You really need to grate the potatoes by hand
Something about the blood from your scrapped knuckles adds that little je ne sais quoi to the pancake.

10. I've given enough for that cause!
My family always made potato kugelis. Roasting pans full.

A friend of mine got a potato grater from Lithuania that does the real trick. But I'm not ready to shell out the bucks for one. It makes the potatoes come out like hand grated. A somewhat gritty consistency but smooth at the same time. Yum.

11. I frequently grate with the processor myself
For latkes you need to squeeze the potatoes and the processor gets them too even and uniform I think. For potato pancakes the processor is just fine and does contribute to a more creamy texture. It all depends on what you want to achieve. It's all good IMO. And I add lots of extra onion too! For potato pancakes I process the onion so I can distribute the onion juices throughout. Yummers.

15. I think I miss the smoother texture
Right now I'm fascinated by the novelty of the twiglette shape of the processed potatoes. But the grated texture is traditional to my family. In my searches I once found a blog where someone mentioned Costco carries the electric potato grater. And in another, someone said that juicers work well if you use the ones that emits the pulp separately. A juicer might be more economical as the electric graters are about $200 these days since they come from Lithuania.

Of all the inventions and gadgets in the world, they still have not perfected a machine that can take the peel off of a potato... I would buy one in a New York minute..... :hi:
