Coconut Date Rolls Recipe
I just got some at the health food store this morning but found a recipe and it's so easy. A no-bake treat. Looks funny but tastes great - I like them chilled with a hot cup of coffee on the side.

Coconut Date Rolls Recipe

2 cups fresh dates, pitted & chopped
1 cup unsweetened shredded coconut

Pulse the dates in a food processor fitted with a blade till they are minced

Move the pulverized dates into a bowl

Spoon out 2 tablespoons at a time and roll into log shapes with your hands.

Roll the date in the coconut until it is coated with coconut

Store in an airtight container in the refrigerator for up to a week.

Serve cold or room temperature.

Some recipes call for a slice of almond pressed into the top. I've had them that way and like them the best.

1. Well, that sounds easy enough!
The only hard part around here would be getting my husband to like coconut. Ain't happening! LOL But I imagine that I can roll them in finely chopped nuts or toasted sesame seeds and he'd probably love them.

..... there's only one food I really don't like, and its coconut.

I can't explain it. I never liked it for as long as I can recall. Not as a kid. Not ever.

And I have no earthly idea why. The last term to describe me is 'picky eater'. I'll even eat bugs and snot at least once. But not coconut.

Your idea about the nuts or the sesame seeds (or how about poppy seeds?) is a great one.

I just don't understand this not liking coconut thing. Bill is like you in that he has never liked it. I think it's one of the world's most incredible foods. He won't eat it and I won't eat enough sweets to make it worth making something with it so I do without.

Btw, nix on the poppyseed. My guess would be very finely chopped almonds that are almost like a coarse powder. And just a light dusting. Those flavors go good together.

5. shredded coconut is teh gross
have you tried a fresh whole piece from an actual coconut? and what about pina coladas for goodness sake? (I'm with you otherwise!)

6. I should have clarified
I dislike dessicated coconut.

I will eat fresh coconut. I will drink coconut liquor and coconut milk and shit like Coco Lopez.

I will not eat German chocolate cake or a Mounds bar or ambrosia salad.

7. yep - except the frosting for German Chocolate cake can be made just
fine without the coconut. Just add more pecans.:9
