Southern buttermilk biscuits....

I used this recipe today and made the best biscuits with it. Just wanted to pass it on to y'all. I bought some organic buttermilk from a local dairy Friday that was thick like clotted cream. These biscuits were just perfect.

Notes for revisions to recipe: I grated the butter instead of cutting into small pieces, and I reduced the oven temp to 425 since my baking sheet was a dark one.

Except I've found you can get the same results by substituting plain yogurt for buttermilk. I always have yogurt on hand.

I use regular milk . . . .
I know the buttermilk would produce better tasting biscuits - but I can use the milk elsewhere . . . and have no idea where I might use the rest of the buttermilk.

3. Buttermilk uses...
Hmmmm.... let's see... pancakes, waffles, some cakes, fried chicken, lots of things.

Have you ever tried the buttermilk powder? You can buy it at any supermarket in the baking section. It comes in a can and stores in the cupboard and lasts indefinitely. It's great for getting that buttermilk flavor but it's handy because it doesn't need to be refrigerated.

4. yeah yeah - ok - so - I was tired when I posted that . . .
too full of my buttermilk-battered fried chicken to think clearly . . . .

but no - I did not know there was a powder . . . . thanks for the tip. For sure I will look for it. I usually make biscuits about once a week.

great and easy to make. I'll definitely try them.

Thanks above for the buttermilk power tip. I've never heard of it.

Also thanks for the yogurt tip.

Here I can buy just a pint of buttermilk. So whenever possible, I like use buttermilk when a recipe calls for it.
