High-temp roast eye of round!
So I had this 5-lb. eye of round from Costco and was wondering how to cook it.

Found a simple recipe:

Preheat oven to 500 F.

Season roast with salt and pepper.

Stick in oven on a rack in a roasting tray. Lower heat to 475.

Roast 7 min./lb.

Turn off oven. Leave roast in oven. DO NOT OPEN OVEN.

Leave roast in for 2.5 hr.

It came out beautiful--nice crust on the outside, tender and juicy inside, and flavorful. Might be a tad more well-done than I like; I haven't eaten my way to the thicker part yet. It's actually a bit pot-roasty in texture, but I don't mind that.

Although it's pretty much as described. Only downside is that it produces a lot of smoke!

How much smoke? I live in an apartment building with lots of seniors and an excitable management. The FD is here often for burnt toast and fires in dirty broilers--everyone gets hauled out into the street. Thanks for letting me in on that detail!

Thanks for posting about this method. I can see this as a helpful way to cook dinner when I need to run errands in the meantime. I don't like leaving when something is cooking.

3. Might want to take it out a little earlier.
Mine's a bit more well done than I'd have preferred, I think (I'm still only a generous sandwich's worth into it). Still wonderfully tasty and tender, though. Like buttah! :9
