Mom's old cast iron fry pan and dutch oven are in the oven on the cleaning cycle. The insides are so smooth but the outsides were crusted. We had to open the windows and put on a fan. So, the oven is doing its job! I can hardly wait to use them.
The one fry pan is pretty old - maybe from the 40s. I bought the dutch oven in the early 70s and at the time asked her if she would use it to season it for me. She liked it so much I "forgot" to ask for it back. :D
There's ash on the outside of both. The inside bottom of each looks smooth and has no ash. Just the inside side of the fry pan has ash. It was pretty crusty. Tomorrow I'll scrub them with the gritty kosher salt and reseason with oil in a warm oven.

I also have an old pot that I still do use.. It has a specvial handle on it that was so it could hang inside the fireplace.. I cook corn on the cob and pasta in it

I went through every box to determine the trash from treasure and these two beauties popped up. I hope you run across your grandmother's pans. It's so nice to use pans that already know how to cook.
i'll let you know how they clean up. a friend of mine from chicago called to gab tonight. i told her about the method and she was glad to learn about it, too.
The pans turned out great. The Clean oven cycle burned the crust on the outside of pans to ash. I cleaned the ash off with plain, soft steel wool. Then I washed it off with plain water and scrubbed the pans with kosher salt using the steel wool. Then I rubbed them with olive oil inside and out and put them into a 200 degree oven immediately.
They turned out smooth all over. The cooking surface is practically non stick. I decided to fry some halibut tonight to try it out. The fish was marinated in teryaki, so I did get some bits stuck in the pan. But I'll scrub them with the steel wool and coarse kosher salt.
