So I grilled up a buncha vegetables .... made some fresh pasta .....

So I grilled up a buncha vegetables .... made some fresh pasta .....
.... have some leftover bufala ..... and some nice fresh riccota.

Grilled vegetable lasagna.

Grilled eggplant, zucchini, yellow squash, two kinds of mushrooms, sweet onion, and red peppers.

I made a fresh tomato sauce with canned san marzanos and fresh herbs, onion, and garlic.

The pasta's resting right now. Then I'll roll it out. But first I need to chop up all the veggies.

Assemble and bake for about 45 minutes. Broil the top at the very end to crisp up the cheese.

1. I never liked veggie lasagna,
especially not zucchni lasagna until my DIL made it. She grilled all the veggies first, then layered & baked. Wow. What a wonderful dish. Sounds great.

I told Stinky we HAVE to have somebody else over. It just doesn't seem right having this to ourselves!

I should have taken pictures as he did this. All the proportions came out great (a little leftover pasta). It's going to be sinfully good -- those veggies have plenty of OVOO on them, hardly low-calorie. (I'll have to take Stinky out for "walkies" later.) :)

3. Sounds mighty fine.
I'm in a similar mood, but my end product is a caponata-like sauce for pasta. Got to do something with all that eggplant and zucchini in the garden. The tomatoes, garlic, and peppers are home grown too.

I'm not making my own pasta so it won't be anywhere near as elegant as your lasagne.

4. Updating again -- I just hafta say,
that was out of this world!!!

Every bite was a different mix of flavors, all smokey and just delicious. The noodles were so thin they got a little lost, but they did hold it all together (it cut like a cake). One of those meals where you can't say anything but variations on "mmm" and animal grunts.

I must say Stinky outdid himself on this one. Almost better than sex -- no wonder I'm craving a cigarette right now!

I'm still trying to get on to the whole "grilled veggie" thing

I tried some zuccs on the grill the other day and didn't do it right

I'll keep trying......


PS have I mentioned this week how lucky you are to have Stinky ?? I'd say he's a keeper :loveya:
