So apparently I've been making congee and didn't even know it.
I looked up a recipe tonight, because it was mentioned in another thread, and realized I'd read of congee but never looked at a recipe before. I expected some exotic asian recipe (and of course, it's not exotic or complicated at all). When I make a basic chicken and rice dinner, I prepare the rice almost exactly the way the congee recipe describes. So now I want to know some of the various asian variations, and am off on a recipe search.

OH--and the recipe notes at the end that congee "can be sweetened."

Well, duh!! That's one of my all-time favorite comfort foods: rice cooked until it's thick and creamy, add butter, sugar and a little milk, and it's....well, I guess it's just a kind of porridge, but it's one of my favorite things in the world. So, of course, I had to make some for a late-night snack. :7

1. I have seen similar recipes for the sweetened variation that were
call "Swedish Rice Pudding". I have found several recipes for this on the internet, but the way it was fixed in our family was all on top of the stove and raisins were added while the rice was cooking. My kids always thought this was a special breakfast treat.
