Whatcha cooking?
Tonight is pizza night. I have fresh mozzarella, some tomatoes from the garden and calamata olives for toppings. And you?

1. I'm doing boneless chicken breasts
I'll probably just bread and pan fry them up and serve them with a salad.

4. Hey, empress!
here's an idea that's along the idea of what you are thinking of: When I have boneless chicken breasts, one of our favorite, easy dinners is to dredge them in Ranch Dressing first, then cover them in bread crumbs (or what I like to do is use Pepperidge Farms Stuffing, that I squish into crumbs), and then bake them until done. YUMMY! Even cold the next day.

7. i do that with veggies only instead of breadcrumbs I coat them in EVOO
then toss them in either Ranch Dressing powder or Onion Soup mix

high in sodium but tasty! works great on taters too!

2. Steak on the grill for us.
It's all about multitasking. I can run through the sprinkler with my son and grill a steak at the same time.

12. Thank you for asking. As a matter of fact....
It turned out nicely, much to my relief. I'm not very talented with the grill, and I tend to over or undercook my food.

This steak was a test of the veracity of the C&B Knowledge Base. There was a thread or sub-thread on salting steak several weeks ago; I didn't bookmark it and can't find it, otherwise I would post my results there. The advice was to salt a steak and wrap it tightly in plastic several hours in advance of grilling.

It worked like a dream, and the steak tasted great.

5. That sounds delicious.
What you had last night, I mean.

Renovating takes a lot of energy, it is hard to cook, too. Soon I will start a thread about all the different prepared foods I have sampled over the past few months.

8. the meat market is all local beef and pork. I can't tell you how long it's
been since I saw beef that wasn't bright red from the CO2 injections

it was actually "beef" colored! :wow:

9. lamb and white beans....
Edited on Wed Aug-16-06 07:36 PM by mike_c
most of one leftover grilled leg of lamb (marinated in garlic/rosemary/lemon/spice paste overnight, then grilled over mesquite), meat chopped and bone thrown in the pot
1 lb of dried great northern beans, soaked overnight
1 large sweet onion, chopped
some olive oil and some bacon fat
1 Tbsp of capers, rinsed
6 large garlic cloves, chopped
chicken stock to cover
dash of worchestershire sauce
a couple of bay leaves
salt and pepper, etc

Browned the solid ingredients, then added the liquid. Simmered until the meat and beans were very tender. Just added a can of Rotel tomatoes and chilis. I'll simmer for another 30 or 40 minutes, then serve with a simple salad and a glass of wine. There will be lots of leftovers to freeze and take to work next week!

10. Fresh ground burgers, just picked corn, steamed new potatoes, salad.
We got our veggies in from the co-op today and I picked up a nice chunk of chuck out at the meat market. It's humid so I'm cooking out tonight, but I'm thinking about turning on the oven after the sun sets to make a peach cobbler. We've got peaches coming out our ears thanks to the co-op.

16. We just got through with a period of intense heat.
I made a lot of salads. I also figured out why southerners are so addicted to iced tea.

14. Lean pork chop and a baked sweet potato
Both smothered in onions. Slice of Boule bread on the side. It was good!

15. Carrot soup
And my improvisation of baked samosas using phyllo dough. It wasn't authentic, but it was tasty (and healthier than the deep fried versions)!

17. One-skillet mess
sliced potatoes, chopped onion, diced ham, chopped serranos and assorted spices. Cook in melted butter until potatoes are done. Only dirties up one skillet-easy cleanup.
