Avocados

My tree just dropped 11 avocados.These are the big green kind and not the small delectable Haus(sp). I have a lot more still on the branches. I don't care for guacamole. Do any of you wonderful cooks have any good recipes for them? I usually eat them sliced with a bit of salt or in a sandwich with sprouts and mayo. I am afraid I will go out tomorrow and find more on the ground. I need to do something with them besides giving them all away. I have unloaded a ton of them already on family and friends.

1. I dice them up along with some tomatoes, onions,
garlic, salt, cumin, olive oil and lemon juice and a touch of cilantro. Serve it in the cleaned out avocado shell. It makes a pretty salad.

You are so lucky to have a tree. If I lived near you I would gladly take some off your hands. I would just eat them in salads, sandwhiches, burritos etc. I'm not sure what else you can do with them but that salad sounds pretty good! :9

and even freeze them.

I like grilled avocado, bacon, tomato, lettuce salad with warm bacon vinegrette.

how do you grill avocados? aren't they too soft? Also, how do you freeze them? When you thaw them for use, are they the same consistency as before?

8. I use them in Massaman Curry
its a Thai curry, but it is not very spicy at all, just very flavorful. I get the Massaman curry paste at out local asian market. I use pork, chicken or beef, and stir-fry the meat. Then in another pot, I'll put the Massaman curry paste and a can of coconut milk, and bring to a boil, then simmer for a little while, say, about 10-15 minutes. Pour the sauce mixture over the meat, and bring to another simmer. Add sliced avocados and unsalted peanuts to the curry mixture. I serve over Jasmine Rice. Its absolutely delicious, and the textures and flavors together are wonderful!

I copied this recipe from our favorite local Thai restaurant where I first tried massaman curry, and she put the avocados in the sauce. I sliced them length-wise very thinly, and put the avocado slices in the sauce.

I've got a few tons of zucchini, lots of lemon cucumbers (and they are the nicest cukes on the planet, in my not so humble opinion), and we'll be having a run of tomatoes later this week.

My extras are going to the food bank, usually.

Yes, I saw Alton Brown do this last week, I swear. He said you can substitute avocado for the egg, it serves the same purpose (in ice cream, that is)

13. GUACAMOLE DEVILED EGGS
I ran across this recipe a few day ago. I haven't tried it yet but it sounded interesting though I will need to make a few changes. It seems like there would be a lot of filling left over.


GUACAMOLE DEVILED EGGS

INGREDIENTS:

6 whole eggs in the shell
2 avocados - peeled, pitted, and mashed
1 tablespoon chopped cilantro
1 tablespoon minced green onion
2 teaspoons minced seeded jalapeno pepper
2 teaspoons fresh lime juice
1/2 teaspoon salt, or to taste
1 dash hot pepper sauce (e.g. Tabasco), or to taste
1 teaspoon Worcestershire sauce, or to taste
1 teaspoon Dijon-style prepared mustard
1 pinch paprika



DIRECTIONS:

1. Place eggs in a saucepan and cover with cold water.
Bring water to a boil and immediately remove from heat.
Cover, and let eggs stand in hot water for 10 to 12
minutes. Remove from hot water, cool, and peel. Slice
eggs in half, and remove yolks to a mixing bowl.

2. In the bowl with the yolks, combine the avocado,
cilantro, green onion, and jalapeno. Stir in the lime
juice, and season with salt, hot sauce, Worcestershire
sauce, and mustard. Mix well, and fill empty egg white
halves. Chill until serving. Sprinkle with paprika just
before serving.
