I just made a great cake! Vanilla-Cream and Strawberry.
I used a vanilla cake recipe.......two layers. base layer was covered with strawberry preserves. Top layer was dug-out with a middle well. I placed a mixture of heavy whipped cream and mascarpone inside the well....then filled it up fresh, sugared strawberries....I then iced the sides of the cake with butter-cream icing and garnished the cake with large whole strawberries and powdered sugar.
I made one last week for a co-worker who wanted her birthday cake made with some hint of strawberries. That is what I came up with....but I used 4 layers for her cake. I used the King Arthur's Butter-Vanilla cake mix....I cheated a bit. I don't bake enough cakes to buy the bag of Guinevier Flour for cakes. Close enough for me. I think one can buy a vanilla box cake at the grocery store.
but they have already announced this year's winner. It's not really a cake contest though, they have several categories. This year's grand prize winner of a million bucks made a chicken dish.
