Fish sauce
OK, so I'm lazy and don't feel like using gas to go to the Thai grocery, so is there any kind of realistic copycat version of fish sauce?

I just found a treasure trove of rice wrappers - the big kind - and cloud ear, shitakes, tiger lily buds, plus all the nice carrots and cucumbers and cold chicken, and I am thinking that there is one long day of spring rolls in the future here.

But, no fish sauce? What to dip them in?

1. Soy sauce, ginger, chopped scallion
and a drop or two of hot chile oil.

Sriracha is good.

Oh, bless your heart - I'm soaking the rice vermicelli now, all the vegetables are slivered, the shitakes are soaking, too, and I already had the Sriracha out.

Maybe some garlic, too? Oh, thanks so much!

Added on edit: While trying to research substitutes, I came across this -

I've bought their spring rolls there, and they're great. But, they're a whole lot cheaper to make at home.

Good, though, for prepared foods.

2. I'd love to find one.
When I'm out, I do without. Do you make soft spring rolls or fried? The soft ones are a staple summer dinner around here with a lime & fish sauce dip.

The big - almost dinner-plate-sized rice wrappers - soaked and stacked between towels, just waiting to be filled and wrapped. They hold together so well, they're just so easy.

Lime? Hmmm. I have limes here .......
