Searching for a lost crockpot recipe
We're having our three times a year block party Sunday and I want to make a crockpot recipe I did a few years ago, which as been requested by a few people. It's soooooooo simple, but I can't find the damn thing. I'd improvise, except for the fact that some people are expecting what they've had before.

It's simple and popular, so maybe someone here recognizes it. Here are some of the ingredients: cooked chicken chunks, stuffing/dressing, some type of cream soup(s), Swiss cheese and what else???? Onions? Celery? Neither?

I have a few quarts of cranberry sauce in the freezer and it's the perfect side.

1. Do you make the dressing yourself or is it boxed?
If you make the stuffing, then that might have the celery & onions.

This sounds really good and an easy way to make chicken with stuffing.

I Googled crockpot chicken with stuffing.

It has the swiss cheese and sounds great.

4 Chicken Breast, Boned and Skinned
4 Slices Swiss Cheese
1 Can Cream of Chicken soup
1 Can Cream of Mushroom soup
1 Cup Chicken Broth
1/4 Cup Milk
2 Cups Pepperidge Farm Herb Stuffing Mix
1/2 Cup Melted butter
Salt and pepper to taste

Season chicken breasts with salt and pepper and place chicken breasts in crock pot. Pour chicken broth over chicken breasts. Put one slice of Swiss cheese on each breast. Combine both cans of soup and milk. Cover chicken breasts with soup mixture. Sprinkle stuffing mix over all. Drizzle melted butter on top. Cook on low for 6-8 hours.

Notes: You can also mix the chicken broth with the soup and you get almost the same results. If you pour the broth over the chicken it keeps the chicken moist and tender. I only used 1/2 the amount of butter called for, and would use more with another cup of stuffing mix next time.

Thank you!! It was the soups and broth that I couldn't remember just which or what.

Also, for a covered dish thing, I cut up the chicken and cut the Swiss into strips. Like I said, it's really good with homemade cranberry sauce along side.

I'll be taking this, along with my baked beans and a big pan cornbread made with caramelized onions and sour cream (also by request). We'll have several briskets. You can smell them on grills up and down the street all day long.

We always have tons of desserts. Evidently our heathen street doesn't do Lent. Personally, I always liked my dad's sacrifice. He always said for Lent, he gave up his New Year's resolutions.

4. My kind of guy - your dad!
Now I want to make this chicken recipe, too. Stuffing a chicken gets old. This recipe makes it look like not a crumb get's wasted. Have a blast!

5. I fixed this today
It was very tasty. But I did use 5 cups of the stuffing instead of two and didn't use the butter. Next time, I'm just going to use one can of a soup instead of two. Maybe change-up to cream of onion or celery. The chicken is very tender (I did soak it in salt water yesterday).

We liked it a lot!

8. Brining
A 1/2 cup of Kosher salt over the chicken. Then cover the chicken with cold water and let it sit and hour or even overnight in the fridge. Rinse well and use the chicken in your favorite recipe. It makes chicken more tender and can flavor it if you use a brine with more ingredients.
