have occasionally when we've had a big brunch.
English muffin pizzas are one of my DH's favorites. It might sound
bad, but they're not bad and oh so easy! He's getting pepperoni
and I'm sauteeing spinach as I type. Hmmmm. :9

So, does anybody out there have really easy, light recipes they
care to share?

1. Can't beat hamburger (ground round for us) , onions & any ole pasta
This is one of my husband's absolute favorites..:shrug:

another is pounded round steak julienned strips, dredged with flour..fried...makes gravy with pan drippingd.. pour over rice..:shrug:

Both are 10 minute meals :)

2. Shallot and herb stirfry.
20 minutes from the time I took the meat out of the baggie.

8 ounces of chicken, beef, pork, shrimp, or tofu (we like it with beef), sliced thin and on the diagonal
2 cups of veggies (we used asparagus tonight, but it works with mixed, frozen or clean out the fridge veggies, too)
half an onion, sliced
3 Tb oil, half and half veggie oil and toasted sesame oil
2 Tb soy sauce
2 teaspoons honey (or a squeeze of the bottle for 10 seconds)
1 package of Bali Spice Shallot and Herb (bumbu bakmi goreng) seasoning (from www.Peaceworks.com, though King Soopers/Kroger carries it, and I think Whole Paycheck does, too.)
1 package chinese rice noodles, or 2 packages of ramen noodles, without the salt packets.

Stirfry the protein in the oils, then add the veggies. Stirfry. Start the noodles boiling. Add the seasoning, the honey, the soy sauce. Stirfry. Drain the cooked noodles. Add. Stirfry.

Divide, eat.

3. Get one boboli
1 8 oz. jar roasted red peppers
basil
cayenne
garlic, pressed or minced
little olive oil
monterey jack cheese/mozzarella

Drain jar of red peppers & pat dry. Combine with garlic (1 clove or 2) basil, & a pinch of cayenne. Put in food processor or blender & puree.

Spread on premade pizza shell (if you're a purist you can make your own dough, but I like doing it on the quick). Top with about a cup of jack cheese & another cup of mozzarella. Bake at 450 degrees for about 10 minutes or until cheese is melted & golden.

This is really a recipe that I throw stuff in rather than measure, so don't hesitate to change it to your liking. I also top with black olives.

I found the recipe in Jeanne Lemelin's Main Course Vegetarian Pleasures. Still one of my favorites.
