Oh my goodness.

Never made this before, but Alton Brown inspired me.

Oh. Goodness. I used the 'raw' version, with pasteurized eggs.

1. I gave up on eggnog
the day I came home late that Saturday afternoon when I was about 10 or 11 years old, and Mom had fixed eggnog. What a nice surprise on that cold winter day!

Mom wasn't all that great a cook, and really got bored with recipes.

She skipped the part about beating the eggs, and didn't bother with the cooking business, either.

That's when I gave up on eggnog.

2. one of our stores used to carry the pasteurized eggs,
but they quit. grrrrrr. I'm now stuck with lots of favorite recipes & no way to make them. double grrrrr

5. It's easy to do at home
We first did it back in the eighties, for our Caesar salad. I can't remember exactly how we did it, but it involved the eggs in a low oven for a certain amount of time, and it worked just perfectly.

I got it, too. Once is too much.

But, yeah, we never had any problem with using raw eggs in anything with our home pasteurization. As I recall, there was information on how to do - 'way back then - in a pamphlet we got from the FDA.

If you're at all hesitant about it, don't do it.

Well .... actually, it is. It can even kill. But back in my school days, food poisoning was de rigeur. Lots of e coli and sal. Intestinal cramps were as common as morning coffee and undone mise en place. One builds a tolerance .... but one also grows more cutious. That's why a spray bottle of bleach and a pump bottle of hand sanitizer live on our counter.

I got food poisoning from a hot dog I ate at a hangout when I was in high school. It was called the "L&D," which, we were all pretty sure, stood for "Local & DIrty." Or "Local Dump."

So, after a long stretch of worshipping the porcelain altar, I was pretty much unconscious for a couple of days. Then, healthy again, back to school.

Yep, I had another hot dog not long after, and, yep, it happened all again.

I was blessed with a father who, while holding my head over the toilet, said maybe the funniest thing anyone's ever said to me. Try barfing and laughing at the same time.

A few months ago, we had a turkey dinner at a friend's house. All four of us puked the night away. Don't you just love contaminated poultry? I sure do.

We keep a spray bottle of white vinegar, H2S, and a big dispenser of hand soap, right there at the sink. And each cutting board has a different purpose.

Ah, The Beaver ...............

12. I got food poisoning from hot dogs, too...I've had it at least
10 times. NOT a good thing. I cook at home more often now--I used to eat out daily.

10. I don't think eggs are as a big of a problem as other things
Both times I've had food poisoning was from eating lunch meat turkey. I rarely eat land animals anymore, but on the few occasions I do you can bet it won't be lunch meat turkey. Blech! However, I've made caesar salad with raw eggs many times and never had a problem.

My Joy of Cooking says you can coddle the eggs by gently boiling for 2 minutes but I never bother.

11. I had read that only 1 in a 100 eggs is infected with
salmonella, while 80 percent of chicken is. When chickens are slaughtered they're put in a communal bath. So, I never worried about raw eggs. Well, that 100th raw egg I ate got me. It was in homemade ice cream & I wasn't careful to get the creme agnlaise up to whatever temp it was supposed to be.

Others can talk about how it's no big deal, but I'll tell you that first I was afraid I was going to die & then I was afaid I wasn't going to die.
