Today I start my preperations for our Christmas tamales
The recipe is a labor of love that I am sure will die with me, as my kids dont want all the work it entails. This week will be shot with making tamales and cookies. I love to cook.

I don't like my tamales loaded with mesa but the olive in the middle gives a special kick.

I don't make the tamales, a friend does, the meat and masa is very balanced with the green olive in the middle, she also adds enough liquid to make the masa moist. With most tamales all there is -- is too much masa, very little meat and very dry. Her tamales are the only tamales I will eat, moist and spicy with the olive that gives a kick and there is actually meat.

Someone else made me vegetarian tamales once, too much masa, too dry and no olive in the middle. The tamales would be great if they were not too dry and too much masa.

Maybe I can get together with her during the holidays to learn how she makes such fantastic tamales. My favorite with her tamales is to have sunnyside eggs with it. My favorite breakfast.

8. How do you make your masa? Lard, crisco, or oil?
I'm thinking of making some tamales this weekend for our baby shower and Holiday Wingding on the 18th, but I've never made them before and I don't have a recipe. Would you be kind enough to post yours?

I think I remember how to do the spreading, stuffing, and wrapping. What I don't know is how to presoak the husks or how to make the masa.
