I'm in a cooking mood today.....I'm already cooking dinner
I just put beef shanks in the oven to do a slow braise. I threw some golden beets in to roast as well.

We're going to have Braised beef shanks in wine and garlic with mashed yukon gold potatoes.

Chantrelle mushroom ragout.

Roasted golden beet salad with an orange vinaigrette and pecans served over romaine.

I'll be serving a Montepulciano with the beef.

I have some beautiful Comice pears that I got at the market this morning which I'll slice for desert and drizzle with some warm caramel sauce and serve with a scoop of vanilla ice-cream.

But I got Taylor Pork Roll slices at the market today.

Sauteed onions, lots of them.

Pork Roll slices fried up brown and crusty.

Hard roll? Or onion roll?

Your expertise is welcome, TEOA.

I am planning on eating four of them and then dropping dead.

You'd probably die alone too....

But I can't really discuss it for then I might have to remove as a bodily function post.

But definitely I'd go with the hard roll....Those who clean up after you would appreciate it.

You can use any kind of mushroom. Chantrelles are on sale here so I scored quite a bit.

I will brown them in butter with shallots and add a reduction of the braising liquid of the beef I'm cooking. I'll finish it off with a little Cognac and butter.

So really all it is ....is mushrooms in a very rich gravy.
