Curried Chicken (or leftover turkey)

Curried Chicken (or leftover turkey)
Curried Chicken lowfat (this might be good with turkey leftovers) Serves 8 (I usually double it for 12 - 14)

2 T chopped onion
2 T chopped celery
2 c. chicken broth
1/2 tsp salt
1 T curry powder
1/2 c flour
1 1/2 c half & half ( I use non fat)
1 c milk
3 cups chicken

Cook onion and celery in 1/2 c. of broth until soft. Add salt and curry pwd and mix thoroughly. Add flour and cook until bubbly. Add milk, cream and the rest of the broth stirring constantly over med. heat until smooth and thick. Cook until all the starchy flavor has disappeared. Be careful not to burn half & half. Add chicken and stir.

Serve over brown rice with condiments.

Condiment suggestions:
real bacon bits
Chutney
chopped almonds or pecans
durkey onions
shredded coconut
olives
raisins

Very fun for a party. The curry is VERY mild and people may not even notice it.

1. I Made My First Curry Chicken Tonight
It came out great.

Sautéd onion/garlic and stir-fried the chicken, then threw in some apple chunks, curry powder, ground cloves, turmeric, pepper, and um .. other stuff, with about 1/4 cup of coconut milk.

My kitchen smells wonderful ...
