1. Funny you should ask. I was just about to start a thread about
this little packaged meal I just had. Fantastic Foods "Carb'Tastic" Vegetarian Chili Mac. I don't care about the low carbs but I do care that it's veg and it has 21 grams of protein. To my surprise, it was pretty darn good! I added a couple of ounces of shredded cheese (because I always do that to chili). Also had some lousy italian bread with cold melted sprinkle cheese on it. And I'm about to drink my desert: chocolate milk.

For brekky I had a "CarbWise" bar, also 21 grams of protein. And coffee.

2. We have that at my grocery store
but I was always afraid to try it! I am funny about mock meats. Now I will try it! Thanks!! That's the whole point of this thread-to get new ideas! :)

3. new ideas -- I need 'em
right now I'm looking for a sure-fire recipe for chili with something that will simulate ground beef. I prefer bean-less chili, and chili's one of my favorite meals, so this will be one of my biggest adjustments.

12. Try the Fantastic Foods Chili Mix
It's basically TVP with all the spices. Add Beans (or not) and canned tomatoes. It's pretty good and quick.

4. For breakfast
I had cereal w/banana slices in soy milk. For lunch I had Near East rice pilaf with diced tomatoes & baked tofu on top - yum - a fave meal! For a snack I had rice crackers & artichoke hummus. And of course, a Blue Sky ginseng cola. I have finally weaned myself off the evil Coke, thanks to the ginseng cola.

Tonight I'll have tofu scramble over toast spread with Tofutti cream cheese w/ a side of broccoli.

And people think eating vegan is boring!

Bagel with cream cheese, tomatoes, lemon pepper
Cloudforest coffee with vanilla creamer
Whey protein w/milk
1/8 cantalope
apple
banana

Almost lunch time, which I didn't bring, which probably means pizza from Costco.

13. Olive and Sundried tomato pasta for brunch
(I woke up late and am not much of a breakfast person anyhow.) I'm babysitting tonight, I think we're going to get chinese food. My fridge is messed up and I don't feel like going to the grocery store and negotiating with SAD eatin' kids to find something they will eat and I'll cook.

For desert I'm thinking no-bake fudge oatmeal cookies.

18. No meat since early Sunday, and that was just a tiny bit.
This is very new to me; the first time I've gone meat-free.

I've had fruit, cereal, noodles with sauted mushrooms, PBJ, tea, a little soft drink.

20. Thanks. I need to get better organized.
My husband loves meat, and so does my autistic eight year old. My six year old son doesn't care for meat. But I am still the one who is largely responsible for getting everyone fed.

Tonight, we were all hungry so I boiled up some spaghetti noodles and brought out some sauce I made and froze a month ago. Yes, it has ground chuck, mushrooms, etc in it. I raked out as much of the meat as I could from my serving. I was surprised by how grossed out I felt about it being on my plate. I probably ate some, but it was very little, and not because I wanted it. Next time, I'm making meatless sauce for myself and my second child.

It feels good to come here for the support.

Strangely, it was the dairy cows story from The Corporation that probably turned me off meat. I suppose if I knew that all of my beef (and other food) was raised without additives, I wouldn't have thought about this, especially living in south texas. It won't be easy for me, especially dining out where the tables sit opposite what might as well be a trough of animal flesh brimming in A-1 sauce or gravy.

21. Hi, Ilsa!
Welcome!

What a leap you've made...congratulations! I hope that you'll find a lot of information and support from your fellow veg* folk here in this forum.

Personally, I've met a lot of really great folks here. I don't know when I've felt more welcome in a particular forum.

22. Thanks. I really appreciate the good wishes.
I have alot to learn. I had a wonderful frittata for breakfast this morning...Yukon gold potato, yellow sweet onion, a few strips of green bell pepper, and three eggs. I split it with my oldest son. Delicious! I didn't even miss the bacon (one of my weaknesses).
