Anyone have a good vegan cookie recipe?
I've had a request that I'd like to fulfill. I did a search and also looked in the recipe thread and found one recipe, but I'd like others.

I'd prefer to make something non-vegans would like, too. I have a natural food co-op nearby, so finding ingredients shouldn't be an issue.

No coconut (my own personal preference), though coconut milk is OK.

1. I've got skillions. What kind are you looking for?
White Chocolate Macademia nut cookies

Ingredients:

1 1/4 c. white or unbleached flour
1/2 t baking soda
1/4 t salt
1/2 cup room temperature Earth Balance or another dairy free margarine (use regular, not whipped organic)
1/2 c sugar (beet sugar and unprocessed cane sugars such as turbinado and sucanat are reliably vegan, white cane sugar is sometimes processed with bone char)
Enner-G egg replacer (a boxed powder available at health food stores) equivalent to two eggs well mixed with water (use a little more than the package says if needed)
1 teaspoon real vanilla extract
1 cup vegan white chocolate chips, available here: http://www.veganstore.com/index-store.html...
1/2 cup macademia nuts

Preparation:
Preheat oven to 375.

Mix flour, baking soda and salt in a bowl, then combine earth balance, egg replacer and vanilla in a large separate bowl until soft and well mixed. Add the dry ingerdients to the wet and combine well. Fold in the white chocolate and macademia nuts and drop well-spaced spoonfulls onto a cookie sheet and bake roughly 8-12 mins until spread out and lightly browned. Let cool on drying racks before serving.

2. Thanks, that looks pretty good!
I can probably get vegan chocolate (white or otherwise) at the co-op.

Basically, I am looking for something that looks like a cookie and not like one of my dad's bad health food experiments from the 70s.

(And thanks for reminding me, I've got about three drops of vanilla left.)

A spice cookie might be nice, too.
