Today I made the tempeh Rubens from Vegan with a Vengeance
& omg! They are delish! :9 :9 I used Nasoya 1000 Island dressing instead of making my own but what a wonderful taste combo!

I also made two great vegan pizzas & a batch of corn chowder. Our fridge is bursting with delish vegan food.

What about yours?

1. I love that book.
I just got her new cupcake book, "Vegan Cupcakes Take Over the World" and made one of the recipes from that too, which is also great. :9

Try the stroganoff recipe from VWAV - it's yummy too, if a little time-consuming. :hi:

3. I've been on a veggie sub kick lately
I've had a few Veggie Delight subs from Subway, but since they can get pricey very quickly I bought supplies for home made ones. Lettuce, tomatoes, banana peppers, mushrooms, crushed red cherry peppers and veggie cheese on a sub roll. :9


I've got some Tempeh in the fridge and I'm going to grill it up with some Nasoya General Tso's sauce some time this week. I'll stir-fry some mixed veggies to go along with it.

5. Tempeh
First I cut the tempeh in half. Then I (try to) slice each piece in half so it's half the thickness, but I am never very successful at this. I always end up with two very thick slices & two very skinny slices. I've wondered if one of those bagel holders would work for this. ;)

Then I place the tempeh in a skillet & add water to the top of the tempeh & bring to a boil & steam the tempeh. That takes about 12 minutes for all the water to cook off. When the water has boiled off I add the tempeh seasoning, Braggs, garlic, some other stuff & I let it sizzle on both sides for a few minutes. That's it.

I didn't use any cheese. The Nasoya 1000 Island was fantastic & much lower fat than the dressing in her recipe. I also liked the sandwich better without the sauerkraut.
